This eau de vie, literally translated as "water of life" in French, is a distillate produced from fermented must. This must is the residual product from the start of the vinification of the renowned Belgian wines of Clos D'Opleeuw. To start making these high quality wines, the must is not dry pressed. The result after distillation is a clear, colorless beverage with an intense flavor and higher alcohol content.

Peter Colemont, winemaker in Limburg Gors Opleeuw, is known as the best wine producer in Belgium. His wines are highly coveted, with an annual production of about 2,500 bottles, demand far exceeds supply. In 2016, Peter was approached by a distillery friend from Normandy (France) and they got to work on this little side project. The result was a 2 x 7-year-old eau de vie that reiped in oak barrels (one was also flavored with some slightly sweet botanicals) and a third non-matured one. Since February 2024, these 3 eau de vies are available on a very limited basis to a regular clientele of bon vivants. We are very happy and honored to be able to offer a few bottles.   

This eau de vie can be drunk pure as a digestive, or used as an ingredient in cocktails and culinary applications.
