« Camp out in the woods amongst fruit and oak trees, huddled in sleeping bags in front of the dying fire, telling ghost stories, as someone approaches unseen from the shadows, crushing leaves and herbs. »

Colour : Rich mahogany

Nose : Balsam, marjoram, sage, thyme, morel mushrooms, moss, acorns, rhododendrons, wood smoke, autumn leaves, grass, mirabelle plums, peach cobbler, apples, tangerines, milk chocolate truffles and vinyl.

Palate : Very soft mouthfeel with lashings of flavour, including oak, tangerines, raspberries, peach cobbler, spiced plum tart, balsam, beeswax, chai tea, sage, lemon thyme, chocolate mint bombe, and tahini.

Finish : A tangerine topped cheesecake with a base washed down with chai tea.

Nose with water : Cashew butter, milk chocolate truffles, rubber mats, vinyl, custard doughnuts, strawberry and Champagne jam, banana jam, banana liqueur, sage jelly, peach cobbler and pecan pie with vanilla ice cream.

Palate with water : Honey on hot buttered brioche, dry spices, tarte tatin with Chantilly cream, pineapple turnover cake, balsamic vinegar, plus cherries, tangerines, mangoes and pineapple in an oak fruit bowl, and spices popping in a copper pan.

Finish with water : Clove balls, aniseed twists with a hint of tannins. Conclusion : If a greengrocer's could be distilled in a glass, it would be this fantastic Cognac. The taste of nature.

This incredible immediate post-war Tiffon was resting in a demijohn when it was selected and bottled under this amazing slightly arty label. Mind you, a 1945! Colour: red amber. Nose: you'll first find gentler wallflowers and stewed peaches, before it would move towards many kinds of nuts, especially macadamia, plus something exotic, possibly ylang-ylang, Sicilian mandarins (the ones they use to make high-end perfume), a little
charcoal, vetiver, fresh capers, delicate honeys, a few wild mushrooms… But when was it demijohnned? It could well be around 50 years of age. Mouth: incredible, you do feel exactly why they decided to transfer it from wood to glass, as you do notice a little tannicity in the back of the background, certainly an asset at the time, and possibly a problem five years later. Well, maybe, I may be overthinking here but I find this fascinating. Peaches in syrup, apricots, small berries, pink peppers, tangerines, plums, all-slower honey, glazed chestnuts, blood oranges… Finish: medium, still bright (thanks to the demijohn), with the usual peach-driven fruitiness that the best old cognacs have. Tangerines and hops/Timut pepper in the aftertaste, plus this oakiness on the horizon. Comments: a fascinating Tiffon on several accounts, and certainly a tribute to the Cellar Master who took the decision. Hope he's still with us.
